A Summer treat...
Light Summer Pasta
12 oz. spaghettini (angel hair pasta)
1/4 cup olive oil
6 garlic cloves, chopped
4 oz. pancetta (italian bacon)
1/4 tsp. dried crushed red pepper flakes
1-1/2 lbs. grape tomatoes
3 T. fresh basil shredded
1-l/4 cups grated romano cheese
salt and pepper to taste
Cook pasta in pot of boiling salted water until tender but still firm to bite. Drain, reserving 1 cup liquid. Return pasta to pot.
Meanwhile, heat oil in large skillet over medium high heat. Add garlic: stir 30 seconds. Add bacon and crushed red pepper: saute until bacon is crisp, about 4-5 minutes. Add tomatoes and saute till soft, about 4-5 minutes.
Transfer tomato mixture to pot with pasta. Add 3/4 cup cheese and 2 T basil. Toss over medium heat until cheese melts and sauce coats pasta, adding cooking liquid. Season with salt and pepper. Transfer to serving bowl and sprinkle with remaining basil and serve remaining cheese on side.

Pomegranite Mocktini for the Mom to Be
3 oz Pomegranate Juice 2 tsp. white sugar 1/4 tsp grated fresh ginger 3/4 oz freshly squeezed lime juice 1/2 oz lime flavored club soda Garnish: 1 tbsp raw brown sugar 1 lemon twirl
Rim a martini glass with the raw brown sugar by rubbing the rim of the glass with a lime wedge while holding the glass upside down. Then dip the glass into a small plate of sugar. Set aside.Muddle the ginger and white sugar in the bottom of a cocktail shaker. Add the juices and ginger and ice. Then shake vigorously. Gently strain into the sugar-rimmed glass. Then top with club soda.
Lay a lemon spiral across the surface of the drink.

Recipe for Snickerdoodles!
1-1/2 cups sugar 1/2 c softened butter or margarine 1 t vanilla 2 eggs 2-3/4 c flour 1 t cream of tartar 1/2 t baking soda 1/4 t salt 2 T sugar 2 t cinnamon
Heat oven to 400 - Mix sugar and butter and beat til light and flufffy. Add vanilla and eggs, blend well. Add flour, cream of tartar, baking soda and salt. mix well.
Combine 2 T sugar and 2 t cinnamon - shape dough into 1 inch balls and roll in cinnamon and sugar mixture. Place on ungreased cookies sheets.
Bake for 8 to 10 minutes or until set - remove from cookie tins to cool.
Yield: 4 dozen
